I wet cured it in a bag with no1 curing salt/salt/sugar/pepper/bay leaf in a ziploc bag for about 9 days.
I removed, rinsed, dried, and let dry on a wire rack in my fridge for another 7 days.
There is no visible mould or discolouring (to my eye). It smells very subtle, almost like nothing, if there is any smell it’s pepper and bay leaf I think.
I just sliced a tiny bit off to show a pic of the interior. I am cooking it in the pan now – smells like pork fat, had a subtly sweet smell to it as it cooks.
Any thoughts here? Will I die?

Lol you’re definitely not gonna die! Looks good and if it tastes good it’s good to go bud. Now you need to try a pancetta arrotolata!!
I like to dry mine for 6 weeks. More moisture loss more flavour.
