Rainbow Plant Life’s red lentil curry.
I’m an omnivore but this has become a staple in my family!

Absolutely delicious and doesn’t call for too much ingredients!

[Brussel sprouts quinoa gratin](https://cookieandkate.com/brussels-sprout-quinoa-gratin/) This became a staple at friendsgivings for years for me. I got multiple phone calls asking for the recipe when I moved away.
OP can you fix the link for the Nile River Lentil Soup, I have some lentils to use up, but it’s linking me to the pizza. : )
[Vegan Chocolate Cake](https://www.budgetbytes.com/chocolate-depression-cake/) It goes by a number of names, Wacko, Wacky, Wowie, Depression Cake, etc., It’s like a devil’s food cake and stays moist for days.
Nice list OP, worth saving, thanks 😍🤗

Cannot recommend enough!
https://www.thegardengrazer.com/chickpea-walnut-taco-crumbles/#recipe This recipe is so easy for trashy tacos/nachos/crunchwraps . I mix everything as listed , but instead of baking I add the mixture with a small can of tomato sauce to a pan to heat up and thicken a little. So good!

Seems like Rainbow Plant Life is getting a lot of love today! This [creamy coconut rice with 5 spice tofu](https://rainbowplantlife.com/creamy-coconut-rice-with-five-spice-tofu/) is my go-to as a filling and tasty meal. It heats up in the microwave really well so it’s nice to have a large batch in the fridge.
NYT Melissa Clark’s [red lentil soup](https://cooking.nytimes.com/recipes/1016062-red-lentil-soup?smid=ck-recipe-iOS-share) is maybe my most made recipe. Super easy and tastes great every time. Sort of similar to Turkish lentil soup. We like to serve with rice, feta, and fresh pita.
