This was my second visit after the 2023 vegetable season. I gotta say, noma remains one of my fave restaurants in the entire world, if not, my favorite ever!
The biggest takeaway from both experiences is that they almost felt like trying everything for the first time as a kid, it is the feeling that you just discovered new flavours, new textures in a very long time as an adult. The unique sourcing of ingredients (fish tongue, fish eyes and more) doesn’t feel gimmicky, as it goes well with the restaurant’s naturalistic philosophy. The combination of ingredients were bold and exciting (especially when it comes to the desserts).
The only negative thing that I could think of was the slight inconsistency. My sea urchin tasted a bit bitter while my friend’s was fine.
