  2. My first capocollo, was in brine/freezer bag for a couple of days in the fridge (can’t remember the exact amount of days). Then wrapped in collagen paper and hung on 20/01/2024 in my biltong box. Today that capocollo is spot on 35% weight loss. The taste is perfect, I could not be more happy with it. I still have a Spanish lomo hanging that should be ready in the next week or so…will report back
