I noticed that my capicole separated during aging, which created an air gap and some browning in the center of the tissue. There is no sign of mold or bad smells, but should I be concerned about some kind of infection?
Process
* Cured in Salt and cure#2 at for 16hours
* Aged 8 weeks
* Fluctuating humidity started way too low 40% for 2-3 weeks then corrected to 70-75% for remainder.
* ~38% weight loss

It looks like your curing salt didn’t make it all the way through. If it doesn’t smell off I’d eat tt
Wait how did you come up with those times? 16 hour cure is *really* short.
