    Breakfast was unsweetened plain yogurt, fruit, and granola. I forgot to add flax seeds before I took the photo.

    Midmorning snack of protein powder shaken with oatmilk. Tasted awful so I added coffee to it to mask that protein-taste. It kinda helped.

    I usually make the salad dressing to follow the recipe but I ran out of Dijon mustard so used a vinaigrette I already had in my fridge. Tofu was tossed in cornstarch and oil, the roasted in oven. If you’re smart you can meal prep a giant batch of this salad in advance and eat for days. If you’re anal-retentive like me, you chop/prep all the veggies, keep them in separate containers, and boil exactly 56g of pasta everyday so you keep the same ratio of pasta to veggies everytime and can better keep track of calories…

    Dinner is just microwaved edamame with flaky salt and half a pb&j on good seed bread from Killer Dave.

  2. What kind of yogurt do you get that’s good? Besides siggis, i have yet to find a vegan yogurt that’s actually enjoyable and not sour. And I’ve been looking for over 15 years
