I had an absolute screamer of a meal at the two Michelin starred Spectrum in the Waldorf, Amsterdam this week. The food was absolutely sublime – highlights being the veal with spicy vinaigrette, unbelievable langoustine with chipotle and mushrooms and a basque cheesecake with honey to die for. Service was slick and drinks were great. Very rare I say this, but this restaurant without a doubt should have three Michelin stars. Insane.
