    For the lunch:

    Jerk tofu is made by tossing tofu in cornstarch, olive oil, and jerk seasoning. It’s then roasted in the oven at 400 for about 40 min.

    I serve that with yellow rice (white rice cooked in rice cooker with cumin, cinnamon, bouillon cube, turmeric, and salt), platanos maduros (I use this frozen brand, https://www.walmart.com/ip/El-Sembrador-Sweet-Plantains-4-lb/21128475?wl13=2091&selectedSellerId=0), plantain chips, veggies, and a copycat pollo tropical balsamic tomatoes (olive oil, balsamic vinegar, sugar, salt)
