Went to Pierre Sang’s restaurant in Oberkampf last night and truthfully, it wasn’t very good. The whole shtick is that it’s counter dining and they don’t tell you what you’ve had until after you’ve eaten, inviting you to guess what it was. This is a concept that was done excellently by Le Chateuabriand when I went some years ago, but here it just didn’t work. It felt like on most occasions things were added to dishes just so there’d be more to guess. For example, why is there pickled red cabbage on a dish of (cold) degree egg with pea purée and why does my pork tenderloin dish with gochujang need 7000 other random ingredients on it. Nearly every dish was (I…think, intentionally) cold. My piece of mackerel was also deboned horribly – looking around no one else seemed to have this issue, so I raised it with my server who said ‘oh I’ll tell the chef at the end or he will be in a bad mood’. Well, ok then? He then disappeared at the end of my meal without even letting me guess what my dessert was (it was rice pudding – very inspired). Upsides – very generous wine pours and six courses was €45.
