Yea, I was always wondering about pulling the bone. Someone said it was because of more chance of bacteria getting into it.
You can always pull the bone afterwards

U really need to tie it up tight if u want to remove the bone. The procutto in grocery store has no bone and if u look at where they cut it to remove the bone, they sew it shut with a machine and then press it to make sure there is no air pockets. If that’s sounds like too much work and u just want something boneless to cut on a slicer, try making a culatello and fiocco. Basically the same thing as prosciutto.
