Recent discussion of shirataki noodles on this sub gave me a hankering for some, so this is what I made for lunch today!
My cardinal rules for shirataki are “don’t use it as European style pasta” and “always mix it with some rice pasta at the same time.” This is one bundle of Havista black rice noodles (340 calories) which give you a nice striking dark colour, plus a package of House Foods tofu shirataki (20 calories) which gives you that nice light hue. You can use a less colourful pasta but I think this is a little more fun! Noodles are mixed with a little bit of soy sauce, rice vinegar, and sriracha.
For the tofu (300 calories) I just tossed it in some coconut nectar (30 calories per tablespoon) and baked it in the oven, then topped with some furikake (25 calories per tablespoon). I’ve been using Trader Joe’s brand furikake lately, which is thankfully a vegan one–be careful as some brands will have fish flakes.
