I’ve lost almost 40 pounds, and kept it off for 1.5 years so far. My key strategies have been plant based eating and meal prepping.

Two dishes I’ve leaned on HARD are wraps with some kind of chickpea/tofu filling, and Buddha bowls of all kinds for dinner.

I feel like I have tried every kind of sandwich filling recipe on the web, and I am on the hunt for some new ideas.

    I made this with dried chickpeas, *not* chickpea flour, which some recipes call for instead. Tried it with chickpea flour some years ago, it wasn’t very good. This one was amazing. I slightly under-strained mine and it turned out pretty soft and melty. It tastes so so good cubed on an arugula salad with honey mustard and plain mustard.

    For tofu, I’ve been really into just plain raw tofu lately (hear me out). My favorite lunch for a while has been toast + generous harissa (Mina is pretty low cal), and like 2–3 slabs of firm, raw tofu on top lol. Generously salt on the tofu and fresh cracked pepper. It’s surprisingly delicious! Especially for raw plain tofu.

    Also made a pot of Banza pasta, mixed in 2 tablespoons of vegan pesto, nutritional yeast, and tossed it with cubes of raw tofu. SO good, lmao I feel insane saying this about tofu out of the package but here we are. The key is making sure it’s paired with something really flavorful, salty, and slightly oily.
