    Recipe for 2 servings:

    112 g dry weight Pastabilities low calorie ruffle pasta

    2 T vegan pesto*

    1 T sun dried tomatoes

    60 g marinated artichoke salad

    30 arugula

    306 g cucumber

    28 g Migros black olives

    88 g red onion

    170 g extra firm tofu used as “feta”

    salt, to taste

    *vegan pesto is store bought and contains: kale, olive oil, water, cashew butter, basil, lemon juice, garlic, corn starch, sea salt, black pepper
