I can’t remember when it was cured, or how long but maybe 4 years ago, just hanging away in my basement. Decided to finally cut into it. Doesn’t smell bad or really of much at all. Tasted a small bit and nothing off
This is the first time I’ve done anything so I just yoloed (potentially literally with cured meats)

Btw if you cut into it. 90 percent sure it should be in the fridge now

I’d eat it, assuming you survive. Looks great although the lack of any records is extremely concerning.

In a tub full of salt for 1-3 months and hanging for 4 years haha it’s either the best damn prosciutto or it went bad. It looks like it’s good to go tho.
