Stand out dishes on my menu included Warm White Asparagus with Champagne-Tarragon Emulsion, Périgord Black Truffle Tagliatelle, and Warm Artichoke Panaché with Citrus Risotto and Sauce Barigoule. Highlights for my husband included the Salmon-Caviar (slowly Baked Salmon; Royal Osetra Caviar, Horseradish Emulsion), and Seared Langoustine with Foie Gras-Cabbage Confit and Truffled Consommé.
