Disclaimer: this recipe is for two people plus leftovers. I weighed everything out and portioned it for the 470 calories on my plate today.
Grits:
1 cup cornmeal
1 tbsp olive oil
1/4 onion
5 g nutritional yeast
1 slice daiya cheddar chopped up
4 cups water
2 tsp “no chicken” bouillon paste
Salt
Tempeh:
8 oz tempeh
1/2 cup bbq sauce
Roasted at 450 until crispy
Collard greens:
150 g chopped greens
2 cloves garlic
2 tsp olive oil
Splash balsamic vinegar
3 tbsp water
0.5 tsp no chicken broth
Salt
Looks yummy and filling
