  1. To make 8 cups of minestrone:

    * 135 g carrots
    * 81 g zucchini
    * 66 g summer squash
    * 123 g celery
    * 1/2 small onion
    * 50 g green beans
    * 1 cup concentrated broth
    * 2 Big Mountain veggie links (spinach and feta flavor, my favorite)
    * 1/4 cup cannellini beans
    * 1/4 cup kidney beans
    * 2 servings of Pete’s low carb macaroni pasta (adds 34 g protein to recipe!)
    * 28 oz can fire roasted diced tomatoes
    * 2 tsp of grapeseed oil
    * salt/pepper/sweetener to taste
    * Italian herbs to taste
    * additional water or broth as desired
