2-3 ripe bananas (300g)
1 tbsp vanilla extract
6 tbsp nondairy yogurt (I used soy)
2 tbsp soy milk
3/4 tsp liquid stevia (adjust to preference)
3/4 tsp cinnamon
90g soy milk powder or unflavoured soy protein powder
90g whole wheat pastry flour (or all purpose)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Preheat oven to 350F. Mash or blend bananas and then add the yogurt, vanilla, stevia and cinnamon. In a separate bowl combine the rest of the dry ingredients. Pour the dry ingredients into the wet and mix until well combined. Transfer batter to a 9×5 in loaf pan. I added some sesame seeds on top of mine for contrast. Bake for 35-40 mins, until browned on top and a toothpick comes out clean.
Note: I baked mine for 35 minutes and it came out a little under baked, so you might want to go closer to 40.
Makes 8 thick slices, 121 calories each (8.1g protein, 21.7g carbs, 1.2g fat)
10 of these a day ought to do it.
