    -4 unhusked corns

    -peel and drop into boiling pot for 10 minutes

    -preferred butter into a hot pan or skillet. Throw corn on until lightly marked on either side. This is to get a more roasted flavor

    (FOR THE CREMA)

    You can either buy it already made or make it yourself, which is what I prefer and is pretty easy.
    1/2 mayo 1/2 sour cream, stir. You got crema!

    Apply using a spoon or brush. Make sure corn is thoroughly covered.

    Begin adding COTIJA cheese. You can find this already grated. Hold corn at angle and throw or toss on cheese, lightly patting it if you’d like to ensure everything is on.

    Once cheese is on, I added smoked paprika, chile y limon seasoning, some crushed up hot Cheetos, and cilantro. You can do what you’d like here, some people add parkay butter and chile powder.
