I made a 3 course dinner! Arugula salad, seared scallops on bed of pickled veggies, and filet with a shiitake bourbon cream sauce and roasted brusselsprouts.

  1. Course 1 was an arugula salad in a homemade lemon dressing with goat cheese, almonds, and caramelized red onions that we paired with a delicious goldenrod mead.

    Course 2 was seared scallops on a bed of pickled veggies made up of corn, jalapeños, and radishes that we paired with a Pinot Grigio.

    Course 3 was filets on top of a horseradish mashed potato that I topped with shiitake mushrooms in a bourbon cream sauce with a side of Parmesan Brussels sprouts that we paired with an Italian red!
