    To make 15 servings:

    * 1 T olive oil
    * 2 stalks celery, chopped (not in original recipe, but lowers recipe cals)
    * 1 small onion
    * 297 g eggplant
    * 2 garlic cloves
    * 15 oz diced tomatoes
    * 144 g cannellini beans
    * 1/8 cup minced raisins
    * 2 T capers for topping
    * 3/4 c broth (instead of water in original recipe)
    * sweetener (to make up for using fewer raisins than original recipe)
    * salt, pepper to taste
    * optional: chopped basil
