  2. I grew up on kanten/agar agar desserts, since my mother is Japanese. So, when I learned I could buy agar agar powder online nowadays, I have gone nuts this summer learning to make my favorites. People are likely familiar with Coffee Jelly (コーヒーゼリー) or Fruit Jelly (フルーツゼリー). 

    My partner likes kanten, but hates coffee. So, on a whim, I experimented and made a jelly with earl grey tea instead, and it turned out great! I am sure there are actual recipes out there, but the way I made it is as follows:  

    Ingredients ratio-   

    1 cup water : 1 tsp agar agar powder : 1+ teabag  

    +sugar to taste    

    Sweetened condensed milk (optional)   

    1. Add water, agar agar powder, and sugar to a small pot. 

    2. Stir frequently while bringing water to a gentle boil. Keep the pot covered when you aren’t stirring to avoid too much water loss.   

    3. When agar agar is fully dissolved, add tea bags and reduce heat. Keep the mix hot (agar agar has high gelling power), but below a boil. 

    4. Remove tea bags when it is steeps to your liking (go a bit stronger than when you drink it), and strain everything through a metal strainer into a container to mold/cool. DO NOT USE A COFFEE FILTER. The agar agar makes it too thick to pass through.        4b. (Optional) Keep a portion in the pot, add sweetened condensed milk, and pour into the container later once it has cooled to make layers. If you are vegan, you can probably add a milk substitute. 

    5. Cover the container, and eventually get it into the fridge. While it will probably set within an hour or two, it tastes best when it has chilled thoroughly overnight.   

    6. Demold, cube, and serve.
