Here’s some more info:
I roasted 2 potatoes sprayed with a bit of oil and sprinkled with garlic powder, cumin, oregano & salt for ~35 minutes on 425.
Also roasted baby zucchini on 425 for ~20 minutes. I sprayed those with a bit of oil too, and sprinkled with lemon pepper and sumac.
Slaw dressing ingredients were just 1 fresh squeezed lime, 1 tsp Allulose & 2 frozen cilantro cubes.
I heated 2 cans chickpeas with 1 tsp oil, cumin, garlic powder, chili powder, chipotle powder & a bit of salt.
I microwaved the TJ’s fresh baby corn for 2.5 minutes and it was so sweet & delicious just plain.
All this made 4 servings. Pictured is 1/4 of everything because I was meal prepping my lunches for the rest of the week too.
Each serving is topped with 1/4 avocado and 1 tbsp pumpkin seeds.
Jicama wraps are the best!!
