    I made these recently! On advice from a friend I used the mini tots – they gave a nice base layer

  3. Recipe:

    Bake tater tots for 30 minutes at 425 degrees. Flip halfway through. They have to be crispy to stand up to the other ingredients being baked on top after.

    While the tots are baking, fry a 500gr pack of ground beef. I use my own seasonings for the beef instead of packets: Cumin, salt, pepper, paprika, garlic powder, onion powder, cayenne pepper, ancho chili pepper and celery seed.

    1 cup cherry tomatoes, quartered

    1 jalapeno, sliced. I leave seeds in.

    I small can of black beans, washed and drained.

    When tots are crispy, put a small amount of shredded cheese on them. Then load beef and beans evenly. Then put all the rest of your shredded cheese on. Then put on tomatoes and jalapeno. Bake until cheese is melted

    Serve with sour cream and guacamole!
