    Inspired by r/52weeksofcooking I decided to go through their archives and try to complete every challenge. This one, from 2012, is the first week – eggs.

    There’s a lot of different versions of carbonara but the most “authentic” versions generally involve guanciale as the meat. For simplicity/time’s sake, I subbed in pancetta. For the pasta I used a pack of bucatini I had sitting around. Eggs from the farmer’s market. Pecorino Romano cheese.
