  2. # Egg Salad on Fresh Rosy Baps with Crisps

    **Egg Salad**

    * 4 Five Minute Boiled Eggs
    * 4 tbsp Mayo
    * 4 tbsp diced green onion
    * S&P to taste

    **Crisps**

    * 1 Small Russet
    * Canola Oil
    * Salt

    1. Heat oil to 160C/320F
    2. Peel and slice thin (1.5 mm on the mandolin)
    3. Dry slices on paper towels
    4. Cook in batches to desired colour

    **Soft Yeast Rolls**

    * 300g bread flour
    * 210g warm milk
    * 20g softened butter
    * 1 tsp dry yeast
    * 1 tsp salt
    * 1/4 tsp sugar

    1. Mix all and knead for 5 minutes
    2. In a greased bowl let rise for 1 hour
    3. Punch down, ball up and quarter
    4. Ball up each quarter pretty side up
    5. Flatten and flour each ball
    6. Place together in a greased square pan
    7. Let rise until puffy while preheating over to 190c/375f
    8. Cover with more flour and bake for 15 minutes
    9. Turn pan and cook for another 5 minutes until rosy brown
    10. Dust off extra flour to serve

    I so want to like egg salad, but I have never found one that I enjoy. Your rolls/plate look great regardless.
