Third time at Aubergine. 2014, 2017, 2024. Each time has been better than the previous. They really have stepped up their game. Small intimate restaurant. Only 5 tables in the main dining space. There is also courtyard dining, but we did not see that space. Staff was very professional and the sommelier was super helpful assisting us with a bottle in our price range.

The amuse course was excellent. Over the years this course has become more elaborate. I can tell they are taking some inspiration from singlethread on this course. Abalone, A5 Wagyu tartare. Tuna + Caviar, oyster. I was really impressed that there was caviar on three courses included in the base menu price. The only supplement offered was A5 Wagyu at 55 dollars per ounce (ounce minimum). The Wagyu looked glorious, but we opted against the supplement.

Although challenging to pick a favorite course, mine was probably the scallop course. Something about a hearty French sauce that provided a welcome
departure to the lighter flavors in the rest of the menu. There was also a really fun gazpacho course which had us break through a sheet of ice to mix the soup with the caviar on top.

The only real critique of the meal was the “nooks and crannies” in some of the plates. Although artistic, the plates were a bit over the top and made it slightly tough to get the last morsels out of the plate.

Price was ~300 per person prior to supplements, but the price is inclusive of a 20% service fee.

Highly recommended for a special night out! Punches a bit above its Michelin one star “weight class”.
