    Trout: 400*F 14-18 min: smashed garlic, homegrown rosemary, homegrown thyme, lemon slices, red onion slices, red pepper flakes, paprika

    Miso marinated eggplant (local farm): (sometimes i use actual miso paste but i was looking for something stupid fast) so i used 2 packets of instant miso soup + a splash of rice vinegar + splash of water for easier coating
    (eggplant goes into the oven at the same time as the trout)

    After about 10 min in the oven, i check on the trout and flip the eggplant, then add the bokchoy (make sure it’s still a little bit wet from washing), drizzle with a little bit of sesame oil and a squeeze of lemon juice and toss w tongs

    all come out of the oven at the same time 🙂 easy after school/work date night dinner

    EDIT: salt and pepper at every step EXCEPT do NOT salt the eggplant until after it comes out of the oven, the miso packet is likely gonna be salty enough. With quick dinners like this i don’t typically measure i just eyeball it

    EDIT 2: served with Union Sacre 2023 dry riesling

    ik the fish in the picture seems like it’s reddish around the belly i promise it’s just red onion slivers poking out lol
