Followed the Ruhlman recipe in Salumi and hung them yesterday in my chamber at 55f and 84% humidity. Plan to drop humidity to upper 70’s in 2-3 weeks. A few hung individually, a few hung as pairs. Do I need to worry about the pairs drying at different rates?
Also, for anyone else who’s made this recipe, did the amount of cinnamon seem too high to you as well?
