Chile with my own seasoning blend-taco seasoning can be used; adjust for desired heat level.

    Ingredients:

    2-lbs ground beef

    3 cloves garlic, minced

    1 medium onion, diced

1 pkg taco seasoning PLUS: 1 tsp cumin, 1 TB Mexican oregano, 2 TB paprika

    1 lg can crushed tomatoes

    2 cans Rotel

    1 can mexicorn, drained

    1 can green chiles

    1 can refried beans

Brown beef; drain fat. Add garlic and onions and cook, stirring, til onions are translucent. Add seasonings.

Turn down heat; stir in tomatoes, chilies, mexicorn, and refried beans.

Simmer for 3-4 hours, stirring occasionally. Taste and adjust seasonings.

Works great in a crockpot, too!

I serve with cornbread, shredded cheese, and sour cream. Other options include onions and jalapenos.
