Bought a jar of preserved bean curd (ingredients are just soya bean, water, salt) from a Chinese supermarket yesterday. I haven't opened it yet but I can see there's a bunch of white funk in there – obviously I'm expecting it be a bit funky as it's preserved/fermented, but I'm not sure if this looks like good funk or bad funk. Any thoughts?
