Recioe for 1 toastie
Handful of mushrooms
Your favourite vegan cheddar
2 of your favourite vegan sausages
2 pieces of soft, square bread (not sourdough, unfortunately, use the cheap stuff, it works best here).
Fry off the sausages and mushrooms in a pan until cooked. I like adding soy sauce to my mushrooms. Then set aside
Apply vegan spread to 2 pieces of bread
Place one piece face down (spread side down) on a frying fan over a low-medium heat (you don't want to burn it, there's no rush)
Place the mushrooms, sausages, plus sliced or grated cheese to taste into the bread
Place the other piece of bread spread side up on top so you now have a sandwich with spread sides out
Put a smaller skillet or heavy pan on top, or a lighter pan with some baked beans tins on top, or a pan then just press down and hold for 2 minutes. You are creating a toastie maker, squashing the sandwich until cooked. Flip it over, repeat until nicely browned both sides
Serve with ketchup, sriracha, bbq sauce, or all of them.
