Dressing: 2 tablespoons cottage cheese; 2 teaspoons lemon or lime juice; 1/4 teaspoon salt; paprika, cayenne, and chili powder to taste. Optionally add a little bit of hot sauce to make it spicy.

Salad: 1 cup shredded lettuce, chopped bell pepper (I used two mini ones), and hard boiled eggs (I used 2 egg whites in this one, but it’s good with the yolks too for a heartier salad). I didn’t have any salsa today, but sometimes I add a tablespoon or so of salsa or pico de gallo.
