Had it with a side salad (not pictured). Just dip the rice paper in warm water then assemble. My favourite Chinese takeout is Crispy Duck pancakes so this is my bastardised version of that.

Cooked the chicken thing wrapped in foil until tender then shredded with a fork and put it under the grill until crispy. Hoisin sauce was from Sainsbury's.
