Day 1470 of posting images of cheese until I run out of cheese types: Bellavitano Espresso

    I’m using stock images but I am always on the lookout for new cheeses to try whenever I go to the store. Credit to “Cheese.com” for the cheese image and cheese facts. If any of you know some cheeses that I haven’t done yet I would love some input!

    Here is your daily cheese facts: Modeled after “traditional Italian farmstead cheese” (in the words of the producer), Bellavitano is perhaps most comparable to the dry, fruity sharpness of an Italian Parmesan—but with the nutty flavour and buttery finish of a Gouda or Gruyere. This well-rounded crowd pleaser is aged 10 to 12 months, and dry rubbed with freshly roasted and ground espresso—imparting a pleasantly grit to the already crunchy, crystalline mouthfeel of this cheese, and introducing a pleasantly well-rounded dark chocolate bitterness that accents, by contrast, the naturally sweet undertones of the base cheese, and coaxes out subtle note of fruit and toasted nuts.

  2. You could get a week or two out of this one since they have so many different rubs. The original Bellevitano and its many rubbed variants are probably the most awarded cheese to come from the state of Wisconsin.

    Bellavitano is one of my favorite to cut quarter wheels of. I can take it straight out of the cooler and go to town. Don’t have to wait for it to come up in temp to preserve my wires, and rarely does it ever break or get messed up when wrapping. I had a half wheel of Ambrosi like a month ago, that still ate two wires after sitting out overnight. I’ve got both in my case right now, but my Bellavitano is the balsamic one. Fantastic cheese!

    I was at Kroger trying to buy Espresso Mascarpone which they have decided not to carry anymore :(. They recommended this to me. I was underwhelmed. I mean it was good but it was no Espresso Mascarpone.
