[homemade] Braised Pork Belly

    Braised pork belly

    Ingredients:
    About 2.5 lb Pork Belly
    1/2-1 inch of Ginger
    1 head of Garlic
    1/2 white onion
    5-10 chili árbol
    2-3 Bay Leaf
    3 Star Anise (1tsp anise seeds)
    1/4 cup of Soy Sauce
    1/2 cup of Dark Soy Sauce
    1/4 cup coco aminos (of 1/2 of soy)
    2 tbs Oyster Sauce
    3 tbs Chinese Cooking Wine
    1 1/2 cups of Water
    1 tbs fish sauce
    4.5 tbs of Brown Sugar

    Season:
    White pepper
    MSG
    Lemon grass powder
    Black pepper

    To prepare:
    Cut the pork belly into 1-1.5 inch pieces.
    In a pot filled with water add a few dried chillies and some black pepper. Bring it to a boil and add your pork belly.
    Allow the pork to boil for about 10 minutes (this step removes the meats impurities)
    Dump and then rinse the meat in cold water.

    In a shallow pot, add your pork belly, ginger, garlic, white onion, and seasonings. Pan fry until the pork belly is slightly golden.
    Next add all the remaining ingredients to the pot (sauces, water, herbs) and bring it up to a simmer. Cover and turn down the heat to low and allow to cook for an hour stirring occasionally.
    Next remove the lid and allow the sauce to reduce and thicken by cooking it on low for approximately 30 minutes (or to your desired consistency).
    Now serve that bad boy up!!!

    I like to eat mine with rice, cucumber/leafy greens, and pickled leeks !
