    Quick Recipe for anyone who wants to try it:

    • Cook rigatoni and set it aside, don’t forget to save the pasta water.

    • Sauté pancetta in a bit of olive oil until it’s nice and crispy.

    • In the same pan, cook diced onions and minced garlic until translucent, then add mushrooms and fresh thyme.

    • Deglaze the pan with balsamic vinegar, then stir in spices (red chili powder, dried oregano, salt, and pepper) along with some butter.

    • Mix in the double cream and adjust the sauce consistency with the saved pasta water.

    • Finally, toss in the rigatoni, top with the crispy pancetta, and sprinkle as much parmesan cheese as your heart desires!
