  1. One box of spice cake mix, 1 can of pure pumpkin puree, and 1/4 cup chopped walnuts.

    Mix all ingredients together, spoon into 12 muffin cups, bake at 350F for 20 mins.

    You could omit the walnuts which brings these down to 155 calories each. Alternatively you could ice them with 1 Tbsp of chocolate hummus for an extra 40 calories.

  2. I’ve made these before! You can also bulk them up, add more fiber/vitamins, and lower the per-muffin calories by mixing in shredded and squeezed zucchini.

    A friend of mine was once going through a tough time and was having trouble convincing herself to eat anything healthy (if at all) but she had no problem eating these 🙂

  3. I make these all the time and they’re great, but they turn quickly because they’re so moist. Be sure to refrigerate.
