First one: roasted tofu, cabbage, kale, broccoli and avocado with a tahini sauce and cashews on top.

Second one: roasted potatoes, roasted cauliflower and chickpeas, pickled red onion, shredded carrots, baby spinach and avocado with and herb sauce and a crunchy topping.

I don't cook much so I'm super happy with how these turned out 🙂
