aidell’s chicken and apple sausage (180)
1/4 tsp olive oil (10)
half log of polenta (175)
4 tbsp storebought pico de gallo (10)
pinch of arugula – not counted

Sliced up polenta and threw in the oven to bake at 450 for 20 minutes. While polenta was going, crisped up sausage in the pan with 1 tsp olive oil (cooked four total saving the rest for additional servings/later use. Threw the sausages in the oven with the polenta for the last 10 minutes.

Next time I would definitely add some olive oil to the polenta, as it stuck to the tin foil on the baking sheet.

Topped off with some storebought pico de gallo and a little arugula to round out the plate/add some fresh crunch.
