I’ve been sitting on this funeral potato recipe for a minute. My inspiration was from one of our very own vegan Redditors, but my search for them came up empty, unfortunately!

This batch was topped with Dill Pickle flavored Lay’s potato chips and paprika! Peas are a light roux with herbs de Provence, dill, lemon juice, and soy milk, red onion, garlic, and pepper. Beefy bites are Gardein with steak seasoning, A1, Henderson’s Relish, and BBQ sauce.
