Travelling allows us to not only explore new destinations, but also to dive into the culinary world of the places we visit. During my most recent trip to London we travelled over 30 minutes by car to visit a Nigerian restaurant, as this was the first time I came across a restaurant from this West-African country during my travels, and I was eager to try it.
Our waiter recommended a few different dishes, one of them being jollof rice with stewed chicken.
This is a popular dish in Western Africa, with local variations in each of the countries in the region. The sauce is generally made by blending tomatoes, red peppers, onion, habaneros, and several different spices, and then slow cooking chicken legs in the sauce.
Thave a habit of buying spices, other ingredients and cookware when travelling to recreate my favourite meals from my travels at home, and in London we therefore travelled to the outskirts of the city to buy all the spices needed to recreate jollof rice and the stewed chicken at at home.
After two hours in the kitchen today I was able to serve a pretty good version of this Nigerian dish at home. Despite the amount of work I definitely plan to cook this more often in the future. What are your favourite meals from your travels and do you recreate them at home as well?
