Rinse and dry Mahi. Pack of cleaned spinach. Shred an 8oz block of Parmesan. Boil noodles and drain. Heat pan to medium high and coat Mahi with plenty of salt, garlic powder, onion powder, and paprika. Sear on medium high in oil for 3” on each side. Heat oil to medium and cook garlic, then add spinach and cook until tender with salt and pepper. The Parmesan sauce is butter, garlic cooked in it, add 4 tablespoons flour, add 2 cups vegetable stock, add 8 oz Parmesan, and 3/4 cup heavy cream with salt and pepper.
