1. Rub mustard then put it in a smoker at 120 degrees for at least 2 hours.
2.Take the ears out then cut them into strips.
3. Fill with BBQ sauce then add Worcestershire and brown sugar then dry marinade again.
4. Wrap tightly in foil and back into the smoker for another 3 hours until the collagen is completely melted.
Best served with mashed potatoes.

How were they? The first time I had a pig’s ear it was delicious. Those guys stop selling them and I haven’t found an equivalent since despite trying two other places
