Hi y’all 🙂 just a few dinners from the past week. Not all of them very photogenic but wanted to show them anyways!
Photos one through four are of Chicken Parm and fresh Pasta night. I made italian-style chicken cutlets and finished them with sauce and fresh mozzarella.
This was delicious and a great way to use up a lot of odds and ends in our pantry and fridge. I made the fresh fettuccine with 3 eggs, 2.75 c flour, salt, olive oil, and a splash of water. It was pretty good but I prefer a more egg-heavy dough with pasta flour instead of AP. But I had ran out of eggs and nonetheless, it was delicious and I think it looked quite nice as well! I prefer my fresh ravioli or gnocchi though. ☺️
Photo five is our dinner tonight- Mushroom Risotto and Candied Prosciutto. Was inspired by a Giada de Laurentiis for the prosciutto and it was so crispy and sweet! Loved it.
The mushroom risotto was great as well, I went back for more. I forgot to buy celery for it which I really love to add but it was still great regardless.
Photo six was a solo dinner- just BBQ chicken and jasmine rice. A great meal that I (and only I, in my house) love that takes twenty minutes. I just cook the chicken, and brush with Sweet Baby Rays and a couple dashes tabasco to make it sweet and spicy.
Photo seven was an outdoor meal. Made on the Blackstone- photo does not do the delicious plate justice. Sliced ribeye, cooked onions, and roasted potatoes. Stick to your ribs kind of goodness.
