I have Celiac disease so I can’t eat any gluten, a protein found in wheat, barley and rye.
Because I have Celiac disease, when I travel I have to get a room with a kitchen so that I can cook for myself as most restaurants cannot accommodate truly gluten-free for medical reasons. Hawaii is nearly impossible to find restaurants with gluten-free Hawaiian food due to everything containing either soy sauce (wheat) or flour (also wheat.)
I have limited kitchen space and tools on this timeshare so I made a gluten-free shortcut Loco Moco.
– Formed into patties and cooked in a skillet with Wagyu fat I rendered from a Japanese grocery store.
– I fried eggs in the same fat.
– Served over white rice and topped with Pioneer gluten-free gravy mix. Garnished with smoked paprika and dried parsley. (I travel with my own dried spices.)

Wow, looks amazing. Traveling a lot for work can be hard on people with restricted diets. We need the automat format back but healthy.
