Vegan Pad Thai from Costco with crispy air fryer tofu added.
The Pad Thai is frozen and just takes four minutes in the microwave. It's pretty dang great and nice to find a pre-made Pad Thai without fish sauce in it. The recipe for the tofu I used is posted in the comments.
I used the tofu recipe from the one above, the only changes I made was adding a little breadcrumbs to the cornstarch mix and I used an air fryer at 400° for 12 minutes.
I added some extra cilantro, scallions and lime juice, as well.
