This is an easy and healthy option for any day meal. Boil a small chicken (about 45 mins) and season to taste. Remove from broth, cool and strip the meat. You can return the bones to the broth and cook for en extra 30 minsorvso to extract more flavor. (If you like a very clear broth, skim the surface while it cooks).

Here I used brown rice, fresh serrano chili, fresh bell pepper, steamed peas, red onion, cilantro and dill. You can season this however you want. I like a bit of sesame oil, chinkiang vinegar and soy sause for flavor. If I have some freshly made on hand, I'll add chili oil instead of sesame. Enjoy.

  • Leftover meat will make another recipe or two depending on yield like chicken salad or chicken quesadillas.
