I can’t have tomatoes, so canned pumpkin is what I tend to use in lasagna or as a tomato substitute in general. Butternut or sweet potatoes also work—I just made some barbecue sauce the other day. My favorite, though, is kabocha, a.k.a. Japanese pumpkin.
