  1. Fried Chicken Parmesan:

    Ingredients:

    • 4 boneless, skinless chicken breasts
    • 1 cup breadcrumbs (Italian-seasoned or plain)
    • ½ cup grated Parmesan cheese
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • Salt and pepper to taste
    • 2 large eggs
    • 1 cup marinara sauce
    • 1 ½ cups shredded mozzarella cheese
    • ½ cup grated Parmesan cheese (for topping)
    • Fresh basil for garnish (optional)
    • Olive oil or vegetable oil for frying

    Instructions:

    1. Prepare the chicken: Just like the baked version, pound the chicken breasts to about ½ inch thickness and season with salt, pepper, garlic powder, and onion powder.
    2. Bread the chicken: In two shallow dishes, beat the eggs in one and mix breadcrumbs with ½ cup of Parmesan cheese in the other. Dip the chicken into the eggs, then coat thoroughly in the breadcrumb mixture.
    3. Fry the chicken: Heat about ¼ inch of olive oil or vegetable oil in a large skillet over medium heat. Once the oil is hot (test by dropping a breadcrumb into the oil—if it sizzles, it’s ready), fry the chicken breasts for about 3-4 minutes per side, until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
    4. Top with marinara and cheese: Preheat your oven’s broiler. Place the fried chicken breasts on a baking sheet. Spoon marinara sauce over each piece and top with shredded mozzarella and a sprinkle of Parmesan cheese.
    5. Broil to melt the cheese: Broil the chicken for 2-3 minutes until the cheese is bubbly and starting to brown.
    6. Serve: Garnish with fresh basil, if desired, and serve with pasta, a salad, or garlic bread.
